What to Expect when ordering a Quarter, Half or whole Beef
If you’ve never ordered beef this way it can seem overwhelming or intimidating, but don’t worry, we can walk you through the whole process!
Front Quarter:
A Front Quarter Beef will have a hanging weight of 175-200 lbs and typically include the following cuts:
Ribeye Steaks, Chuck & Arm Roasts, Brisket, Stew Meat, Short Ribs, Ground Beef and Soup Bones
Hind Quarter:
A Hind Quarter Beef will have a hanging weight of 175-200 lbs and typically include the following cuts:
T-Bone Steaks, Sirloin Steaks, Round Steaks, Minute or "Cube" Steaks, Rump Roasts, Stew Meat, Ground Beef and Soup Bones
Half Beef:
A Half Beef will have a hanging weight of 350-400 lbs and will include the Front and Hind Quarter cuts listed above, you will typically get 80 lbs of Ground Beef on average.
Whole Beef:
A Whole Beef will have a hanging weight of 750-800 lbs and will include the Front and Hind Quarter cuts listed above on a much larger scale. You can expect 150-180 lbs of Ground Beef and will need at least a 15 cu. ft. freezer or larger. This will be about a one year supply of beef for an average family of 4 and will stay fresh in the freezer for that amount of time.

What to Expect When Ordering a Half or Whole Hog
Half Hog:
A Half Hog will have a hanging weight of approximately 90 lbs and will include the following cuts:
Bone In or Boneless Chops, Pork Loin, Hams (Smoked or Fresh), Bacon, Boston Butt or Pork Steak, Jowl, Spare Ribs, Ground Pork or Sausage.
Whole Hog:
A Whole Hog will have a hanging weight of approximately 180 lbs and will include the following cuts:
Bone In or Boneless Chops, Pork Loin, Pork Tenderloins, Hams (Smoked or Fresh), Bacon, Boston Butt or Pork Steak, Jowl, Pork Spare or Baby Back Ribs, Ground Pork, Sausage, Lard, Shank (Smoked or Fresh), Lard and Liver.
